			<content:encoded><![CDATA[<p>Corn is a favorite in our house.  My youngest loves to shove fistfuls of it in his mouth.  Although corn on its own is yummy, it&#8217;s fun to dress it up from time to time.  <strong>Vegan Lime Corn</strong> is a great way to jazz up a great staple. This recipe is very mild, but if you like things spicy add some extra chili powder.  If you don&#8217;t like cilantro, leave it out.</p>
<h3><strong>Vegan Lime Corn Recipe</strong></h3>
<p><em>Ingredients:</em></p>
<ul>
<li>1 tablespoon olive oil</li>
<li>3 green onions chopped, white and green parts divided</li>
<li>1 can whole kernel corn drained</li>
<li>1/4 teaspoon plus 1 dash ground cumin</li>
<li>1/4 teaspoon plus 1 dash mild chili powder</li>
<li>Salt</li>
<li>Ground black pepper</li>
<li>1 lime</li>
<li>1 bunch fresh cillantro finely chopped (optional)</li>
</ul>
<p><em>Directions:</em></p>
<ol>
<li>Heat olive oil in medium size skillet over medium-low heat.</li>
<li>Add white parts of butter and cook until tender, about 2-3 minutes.</li>
<li>Add corn and stir.</li>
<li>Add cumin, chili powder, salt and pepper and stir.</li>
<li>Allow to cook over low heat 8 minutes, stirring occasionally.</li>
<li>Taste it to make sure it&#8217;s spicy enough for you.  Add more seasonings if needed.</li>
<li>Zest lime over pan and stir.</li>
<li>Add green parts of green onion and stir.</li>
<li>Cook another 3-4 minutes stirring occasionally.</li>
<li>If using cilantro, place in bottom of serving bowl.</li>
<li>Squeeze lime juice into pan and stir.</li>
<li>Cook another 2-3 minutes.</li>
<li>Pour corn into serving bowl over cilantro and stir until cilantro is incorporated.</li>
<li>Enjoy!!</li>
