<h3><strong>Vegan Christmas Cake</strong></h3>
<p><em>Ingredients</em>:</p>
<ul>
<li>1 lb Candied pineapple</li>
<li>1/2 lb Citron</li>
<li>1/4 lb Candied citron</li>
<li>1/4 lb Candied orange &amp; lemon peel</li>
<li>1/4 lb Candied cherries</li>
<li>1 1/2 lb Raisins</li>
<li>1/2 lb Currants</li>
<li>1/2 cup Grapefruit juice</li>
<li>1/4 lb Whole mixed nuts without peanuts</li>
<li>2 cups Flour</li>
<li>1 teaspoon Salt</li>
<li>1/2 teaspoon Baking soda</li>
<li>1 teaspoon Cinnamon</li>
<li>3/4 cup Shortening</li>
<li>1 cup White sugar</li>
<li>1 cup Brown sugar</li>
<li>5 tablespoon Cornstarch</li>
<li>1 teaspoon Almond extract</li>
<li>6 tablespoons Grapefruit juice</li>
</ul>
<p><em>Directions</em>:</p>
<ol>
<li>Combine pineapple, citrons, peels, cherries, raisins &amp; currants in a large bowl.</li>
<li>Add 1/2 cup grapefruit juice, mix very well.</li>
<li>Cover &amp; let stand overnight.</li>
<li>The next day, add the nuts &amp; 1/2 cup of the flour to the fruit mixture &amp; mix well.</li>
<li>Combine the rest of the flour with the baking soda, salt &amp; cinnamon in a separate bowl, &amp; mix well.</li>
<li>In a third bowl, beat the shortening for 30 seconds.</li>
<li>Gradually add the sugars, creaming well as you add them.</li>
<li>Stir in the cornstarch.</li>
<li>Add the beaten shortening &amp; sugars to the fruit.</li>
<li>Gradually stir in the flour mixture.</li>
<li>Add the almond extract &amp; the rest of the grapefruit juice, stirring well until the mixture is well combined.</li>
<li>Preheat oven to 275F.</li>
<li>Grease a 10&#8243; square cake</li>
<li>Line with parchment paper &amp; grease the paper.</li>
<li>Transfer the cake mixture to the cake tin and press down gently.</li>
<li>Bake for 3 hours, but check after two hours. If the top is browning too quickly, cover with some waxed paper.</li>
<li>After it is cooked, remove from the oven &amp; place on a wire rack to cool for 30 minutes.</li>
<li>Gently remove cake from the tin &amp; peel away the paper.</li>
<li>Let cool on wire racks till completely cooled. Wrap in waxed paper &amp; keep in a cool place.</li>
<li>If icing the cake, layer with marzipan &amp; then decorate as desired.</li>

			<content:encoded><![CDATA[<p>Calcium is the most abundant mineral in the human body. More than 99% of total body calcium is stored in the bones and teeth where it functions to support their structure. The remaining 1% is found throughout the body in blood, muscle, and the fluid between cells. Calcium is needed for muscle contraction, blood vessel contraction and expansion, the secretion of hormones and enzymes, and sending messages through the nervous system. A constant level of calcium is maintained in body fluid and tissues so that these vital body processes function efficiently.</p>
<p>The average male and female between the ages of 19 and 50 should intake 1000 milligrams per day of calcium: 1200 for men and women over the age of 51.  You should talk with your doctor to verify how much calcium you need.</p>
<p>When calcium intake is low or calcium is poorly absorbed, bone breakdown occurs because the body must use the calcium stored in bones to maintain normal biological functions such as nerve and muscle function.</p>
<p>The most common disease associated with a lack of calcium is osteoporosis, which is a disorder that results in fragile, porous bones.  This disease tends to affect more women than men.</p>
<p>Most modern sources of calcium are found in non-vegan foods: milk and other dairy products.  However, vegans can still ensure they get an adequate supply of calcium each day by proper planning and supplementing.  While most beans and vegetables contain calcium, you will need to plan ahead and measure to get the proper amount of calcium you need.  For example, you would need to eat 1 1/4 cups of Navy Beans to get 300 mg of calcium.  Many juices and soy milks today are fortified with calcium.  You will want to make sure you check the labels for how many milligrams are in each serving.  You will also want to check with your doctor and local health food store for a calcium supplement to help you meet your daily recommended amount of calcium.</p>
<p>It is extremely important for your health that you take the time to educate yourself on how much calcium you need and make sure you meet that level on a daily basis.  Getting the calcium you need while following a vegan diet is not difficult, rather it just takes knowledge and planning.</p>

Although the high-protein diets like the Atkins diet have been fading away to obscurity, most popular diets include meat an other animal by-products as an essential part of the diet. It seems that for years we&#8217;ve been told the trick to loosing weight is to cut down on carbs and increase our animal proteins. If these diets are no longer healthy, how are we going to lose weight? A vegan diet is the answer.</p>
<p>Unlike diets, veganism is a lifestyle change. You don&#8217;t just change the way you eat for a few months; you change the way you live. By making a lifestyle change the weight will come off easier and it will stay off.</p>
<p>When you are on a vegan diet you will skip the refined foods. The vegan diet includes a variety of fresh fruits and vegetables. A variety of fresh fruits and vegetables are essential to any healthy diet. They are low in calories and fat and high in nutrition. The government recommends you eat 9 servings of fruits and vegetables a day. Eat a vegan diet and you&#8217;ll reach that number in no time.</p>
<p>The vegan diet also includes whole grains, beans and legumes which are also essential for a healthy, well-balanced diet. These foods make the diet high in fiber, which means that you will feel fuller for longer. Feeling fuller longer will help tremendously when trying to avoid snacking.</p>

Although following a vegan diet has many health benefits, it is important to remember that you need to supplement the vitamins and minerals you will no longer be getting enough of thru the diet you will be eating. For example, on a Vegan diet you will no longer be drinking cow&#8217;s milk which supplies your body with calcium and vitamin D; you will need to supplement your diet with them.</p>
<p>As with any major dietary change, it is recommended you consult with your doctor before you begin. In addition, you might want to consider easing into a Vegan diet; that is start eliminating animal products one at a time so as not to completely shock your system. The Vegan diet works mainly on the system of substitution: instead of cow&#8217;s milk use soy or rice milk; instead of eggs use an egg substitute that is animal free; instead of getting your protein from meat, fish or poultry get it from tofu, soy or other resources.</p>

			<content:encoded><![CDATA[<p>There is a debate among the Vegan community as to whether honey is vegan or not.  Insects are animals.  Vegans will not use or consume any animal or animal by-product.  Honey is an animal by-product.  Vegans often choose this lifestyle out of concern for the pain and treatment animals suffer when they are used for food or other resources.  Vegans argue that animals feel pain or are treated inhumanely when they are used for their by-products.</p>
<p>Some vegans argue that insects are not conscious of pain and therefore products such as honey and silk do not need to be avoided.  They also argue that even if insects feel pain, the making of honey involves no more pain than then harvesting of vegetables since the harvesting and transportation of vegetables causes pain to insects.</p>
<p>Other vegans disagree with the idea that insects do not feel pain.  They also disagree with the idea that the pain the feel is acceptable and consider honey to be a non-vegan food.</p>
<p>Essentially, the choice is a personal matter; one that each vegan will have to decide on his/her own.  If you do decide that honey can be included in your vegan diet, please keep in mind that not all vegans will share the same view.  So if you make food to share with friends and it contains honey, make sure they know.</p>

			<content:encoded><![CDATA[<p>Have you heard of Vegans, but aren&#8217;t sure what exactly it means to be a Vegan?</p>
<p>Veganism is a lifestyle that seeks to exclude the use of animals for food, clothing, or any other purpose. Vegans endeavor not to use or consume animal products of any kind. The most common reasons for becoming a vegan are ethical commitment or moral convictions concerning animal rights, the environment, human health, and spiritual or religious concerns. Of particular concern are the practices involved in factory farming and animal testing, and the intensive use of land and other resources required for animal farming.</p>
<p>Various polls have reported vegans to be between 0.2% and 1.3% of the U.S. population, and between 0.25% and 2.24% of the UK population.</p>
<p>Vegan diets (sometimes called strict or pure vegetarian diets) are a subset of vegetarian diets, which are credited with lowering the risk of colon cancer, heart attack, high blood cholesterol, high blood pressure, prostate cancer, and stroke. Properly planned vegan diets are healthful and have been found to satisfy nutritional needs. However, poorly planned vegan diets can be low in levels of calcium, iodine, vitamin B12 and vitamin D. Vegans are therefore encouraged to plan their diet and take dietary supplements as appropriate.</p>
<p>The term &#8220;animal product&#8221; in a vegan context refers to any material derived from animals for human use. Notable animal products include meat, poultry, seafood, eggs, dairy products, honey, fur, leather, wool, and silk. Common animal by-products include gelatin, lanolin, rennet, whey, casein, beeswax, isinglass and shellac.</p>
<p>Animal products are ingredients in many products and are used in the production of many more products, although not always present in the final form. Many products use obscure names on their ingredient list, including non-animal sources. Non-food products are not required to provide ingredients on their labels. Although some vegans attempt to avoid all these ingredients, Vegan Outreach argues that &#8220;it can be prohibitively expensive and time-consuming to shun every minor or hidden animal-derived ingredient,&#8221; and therefore that doing what is &#8220;best for preventing suffering&#8221; is more important than identifying and excluding every animal ingredient.</p>
<p>Although honey and silk are by definition animal products, some vegans consider their use and the use of other insect products to be acceptable. However, inclusion of honey and silk are contrary to the definition of veganism given by the Vegan Society.</p>
